Avocados contain several vitamins, minerals and phytonutrients that make this fruit one of the best food items for both brain and body health. As a healthy, monounsaturated fat, avocado helps increase blood flow to the brain, resulting in more oxygen and nutrients to various parts of your brain that help with memory and cognitive functioning. Avocados also help lower blood pressure, which can be a risk factor for cognitive decline. Copper and iron, 2 of the 14 minerals found in avocados, help with blood regeneration and preventing anemia. Additionally, avocado oil is used universally for its anti-bacterial, anti-wrinkle, and healing properties, as well as its high level of vitamins A, B1, B2 and essential fatty acids. Lastly, this plant contains antioxidants that fight against stress and age-related damage.

This highly overlooked super fruit is also very versatile. It makes a great topping for salads and sandwiches, and a fantastic base for dips like guacamole. There are also delicious drinks that can be made from avocado, as well as homemade breads and soups.

This week, try this easy-to-make avocado, tomato, and mango salsa either with organic tortilla chips, or served with a nice white fish.

Avocado, Tomato & Mango Salsa

Ingredients

  • 1 mango peeled, seeded, and diced
  • 1 avocado peeled, pitted, and diced
  • 4 medium tomatoes diced
  • 1 jalapeno pepper seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic minced
  • 1 tsp salt
  • 2 tbsp fresh lime juice
  • 1/4 cup chopped red onion
  • 3 tbsp olive oil

Instructions

  • In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. To blend the flavors, refrigerate for about 30 minutes before serving
