Candied Sweet Potatoes

Cuisine: gluten-free

Ingredients

  • 2 lbs sweet potatoes
  • 1/4 cup butter
  • 1/4 cup maple syrup
  • 1/4 tsp cinnamon

Instructions

  • Place potatoes in a large pot with water, bring to a boil.
  • Lower heat and simmer for 25 min, until fork tender.
  • Remove potatoes from pot and let cool. Then peel and cut potatoes into cubes. Place in a 2 qt baking dish.
  • In a small saucepan combine butter, maple syrup, and cinnamon. Cook and stir until mixture boils. Pour mixture over potatoes.
  • Bake at 350 degrees for 40 minutes.
