Ingredients

  • 15 oz can black beans drained and rinsed
  • 1/2 cup yellow bell pepper chopped
  • 1/2 cup red bell pepper chopped
  • 1/2 cup celery chopped
  • 2 tbsp red onion chopped
  • 1 tbsp fresh parsley chopped
  • 2 tbsp freshly squeezed lemon juice
  • 1 clove garlic crushed
  • 1/4 tsp cumin ground
  • 2 tbsp extra virgin o

Instructions

  • Toss together beans, yellow and red bell peppers, celery, onion, and parsley.
  • Whisk together lemon juice, garlic and cumin.
  • Lightly toss salad with dressing and serve.
