Candied Sweet Potatoes

Ingredients
- 2 lbs sweet potatoes
- 1/4 cup butter
- 1/4 cup maple syrup
- 1/4 tsp cinnamon
Instructions
- Place potatoes in a large pot with water, bring to a boil.
- Lower heat and simmer for 25 min, until fork tender.
- Remove potatoes from pot and let cool. Then peel and cut potatoes into cubes. Place in a 2 qt baking dish.
- In a small saucepan combine butter, maple syrup, and cinnamon. Cook and stir until mixture boils. Pour mixture over potatoes.
- Bake at 350 degrees for 40 minutes.
