- 15 oz can black beans drained and rinsed
- 1/2 cup yellow bell pepper chopped
- 1/2 cup red bell pepper chopped
- 1/2 cup celery chopped
- 2 tbsp red onion chopped
- 1 tbsp fresh parsley chopped
- 2 tbsp freshly squeezed lemon juice
- 1 clove garlic crushed
- 1/4 tsp cumin ground
- 2 tbsp extra virgin o
- Toss together beans, yellow and red bell peppers, celery, onion, and parsley.
- Whisk together lemon juice, garlic and cumin.
- Lightly toss salad with dressing and serve.
