Gluten-Free, Dairy-Free Hot Chocolate
During the holiday season, there’s nothing like treating yourself to a sweet cup of hot chocolate. While chocolate, with its antioxidants and caffeine, is actually great for the brain, the sugars that often accompany this store bought delight are not. In order to satisfy your sweet tooth AND maintain healthy brain function, sometimes you have to think outside of the Swiss Miss box. This winter, leave the sugar at the grocery store, and try a sugar-free, gluten-free, dairy-free hot chocolate recipe. Whether you’re hosting a yankee swap, or watching a Christmas movie with family, this quick recipe makes a delicious pick-me-up for all!

Ingredients
- 1/4 cup unsweetened cocoa powder
- 2 cups lite coconut milk
- 2 cups regular coconut milk
- 1/2 cup light, mild honey OR organic agave nectar
- 1/8 tsp salt
- 1 tsp vanilla extract
Instructions
- Mix cocoa powder, 1/2 cup lite coconut milk, salt and honey OR agave nectar in medium saucepan. Whisk to blend. Heat on medium high and continue to whisk until mixture comes to a boil. Add remainder of coconut milk, heat on medium and whisk. Do not bring to a boil. Remove from heat and add vanilla extract.
