Cool off with my Easy Chocolate Bark recipe! It’s the end of summer, and if you’re looking for a recipe that does not require the use of a hot oven then this recipe is for you because it requires no baking – just a cool freezer!

Especially for those of us who have had brain injuries, it is important to avoid sugar; it is terrible for the brain. Our nutrition expert, Martha, wrote a blog on the dangers of sugar and your brain. However, I realize how difficult it can be to give up sweets. This is why I am writing about this recipe, which uses coconut oil instead of sugar, but still satisfies your sweet tooth!

This easy chocolate bark fits the guidelines of my brain-healthy diet. Along with coconut oil, dark chocolate, surprisingly, is also very good for your brain health, and remember, the darker the chocolate, the better.

The nuts used in this recipe, especially walnuts, have brain-boosting powers as well. Walnuts are rich in Omega-3’s, which are healthy fats that your brain requires to function.

Easy Chocolate Bark

Ingredients

  • 1 bar (about 5 oz) baking chocolate at least 70%
  • 2 tsp coconut oil
  • 1/2 to 1 tsp black strap molasses
  • 3 tbsp crushed nuts I used walnuts and pistachios. Pecans would also be delicious and brain healthy!
  • 2 tbsp shredded coconut unsweetened
  • 2 pinches coarse sea salt or more to taste

Instructions

  • Use a double boiler to melt the chocolate. If you don't have a double boiler, fill a saucepan with a few inches of water and bring to a boil. Place a smaller saucepan into the boiling water to use as a double-boiler. Melt the chocolate in the smaller saucepan, and add the molasses and coconut oil, stirring together until smooth.
  • Place a piece of parchment paper over a baking sheet and pour the chocolate mixture over the parchment paper. Spread it out so that it is just about 1/4 inch thick.
  • Top the chocolate with your toppings (nuts, coconut, sea salt, and anything else you may like), and place the baking sheet in the freezer for a few hours.
  • Break apart into pieces and enjoy!
