Gluten-Free, Dairy-Free Hot Chocolate

Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 2 cups lite coconut milk
  • 2 cups regular coconut milk
  • 1/2 cup light, mild honey OR organic agave nectar
  • 1/8 tsp salt
  • 1 tsp vanilla extract

Instructions

  • Mix cocoa powder, 1/2 cup lite coconut milk, salt and honey OR agave nectar in medium saucepan. Whisk to blend. Heat on medium high and continue to whisk until mixture comes to a boil. Add remainder of coconut milk, heat on medium and whisk. Do not bring to a boil. Remove from heat and add vanilla extract.
