Almond Cookies

Ingredients

  • 2 eggs
  • 1 cup almond butter
  • 1/2 cup cannellini beans soaked, cooked, smashed or if using canned beans just rinsed and smashed
  • 1/3 cup raw honey 1/2 C if want more sweetness and can add shredded coconut for more sweetness
  • 1/2 tsp vanilla
  • Chopped walnuts and/or raisins or dark chocolate pieces optional
  • 1 cup almond flour
  • 1/3 cup whole flaxseeds
  • 1 tsp baking soda
  • 1/8 tsp salt

Instructions

  • Preheat oven to 350 degrees
  • Cream together: eggs, almond butter, cannelloni beans (soaked, cooked, smashed or if using canned beans just rinsed and smashed, raw honey, vanilla, and optional walnuts, raisins, and/or dark chocolate pieces.
  • In a separate bowl mix: almond flour, whole flaxseeds, baking soda, salt
  • Mix dry and wet bowls and bake. Time depends on how big you make the flattened cookie dough on the pan. Check after 15 minutes.
  • *Martha suggests that if you want to change the taste for some batches, add cinnamon and other pumpkin pie type spices.
