Use a double boiler to melt the chocolate. If you don't have a double boiler, fill a saucepan with a few inches of water and bring to a boil. Place a smaller saucepan into the boiling water to use as a double-boiler. Melt the chocolate in the smaller saucepan, and add the molasses and coconut oil, stirring together until smooth.
Place a piece of parchment paper over a baking sheet and pour the chocolate mixture over the parchment paper. Spread it out so that it is just about 1/4 inch thick.
Top the chocolate with your toppings (nuts, coconut, sea salt, and anything else you may like), and place the baking sheet in the freezer for a few hours.
Break apart into pieces and enjoy!
